Rich in fiber and essential nutrients, it’s the kind of ingredient that not only comforts but also fuels your body, making these kebabs more than just a snack—they’re a celebration of mindful eating. Ingredients:
For the Kebabs:
- Proso Millet: 240 gm
- Red Bell Pepper chopped: 30 gm
- Refined Oil: 1 tbsp
- Salt: To taste
- Roasted Peanuts, coarsely crushed: 1 tbsp
- Green Chili, chopped: 1 tsp
- Ginger, chopped: 1 tsp
- Garlic, chopped: 1 tsp
- Garam Masala Powder: a pinch
- Yellow Chili Powder: a pinch
- Water: As needed
- Satay Sticks: 8 nos
For the Mango Mint Chutney:
- Ripe Mango, peeled and diced: 1 medium-sized
- Fresh Mint Leaves: 10-12
- Cumin Powder: 1/2 tsp
- Green Chili: 1
- Salt: To taste
- Lemon Juice: 1 tsp
- Water: As needed
Method:
For the Mango Mint Chutney
- In a blender, combine diced mango, fresh mint leaves, cumin powder, green chili, salt, lemon juice, and a little water. Blend until smooth and adjust seasoning as needed.
For the Kebabs:
- Soak Proso Millet overnight, then strain and boil it in water until fully cooked. Once tender, drain any excess water and set it aside.
- Heat 1 tablespoon of oil. Add chopped red bell pepper, green chili, ginger, and garlic, and sauté until soft and aromatic.
- Stir in crushed roasted peanuts, a pinch of yellow chili powder, and garam masala powder. Cook for a minute.
- Add half of the cooked millet to the skillet and blend the mixture coarsely in a food processor, ensuring it’s slightly chunky for texture.
- With the mixture, form small cylinder-shaped kebabs. Gently roll the kebabs in the remaining cooked millet for a crunchy coating. Insert satay sticks into the kebabs.
- Roast the kebabs over an open flame or grill, turning them gently until they are golden and slightly charred on the outside.
